The beef filling is the sturdiest one we make, a dumpling that eats like a full meal instead of a warm-up. It is the workhorse of our halal line, the flavor guests recognize the second the pot reaches the table. Top a bowlful with browned onions, or put out sharp mustard and let everyone drag their dumplings through it.

How we cook them at home

  1. Bring a large pot of well-salted water to a rolling boil.
  2. Add the frozen dumplings straight from the bag and give them one good stir so nothing sticks.
  3. When the water comes back to a boil, cook five to eight minutes, until they float and the dough turns tender.
  4. Drain, add butter or a spoonful of sour cream, and call everyone to the table.
