Potato is the oldest filling in the pierogi book, the one every Eastern European grandmother agreed on even when they agreed on nothing else. These go home with pierogi people of every background, Polish, Ukrainian, Russian, and the simply hungry. Crisp them in the pan, then meet the hot edges with a cold spoonful of sour cream, and crumble bacon over the top on days that earn it.

How we cook them at home
- Bring a large pot of well-salted water to a rolling boil.
- Add the frozen pierogies straight from the bag and give them one good stir so nothing sticks.
- When the water comes back to a boil, cook five to eight minutes, until they float and the dough turns tender.
- Drain, then finish them in a hot buttered pan with onion until the edges go golden.
