The fried onion is already in the filling, so the hard part of pierogi night is done before the water boils. It suits a table of one or two, and kitchens where freezer space is a negotiation. Straight from the pan they need almost nothing: a little salt, a little sour cream, done.

How we cook them at home
- Bring a large pot of well-salted water to a rolling boil.
- Add the frozen pierogies straight from the bag and give them one good stir so nothing sticks.
- When the water comes back to a boil, cook five to eight minutes, until they float and the dough turns tender.
- Drain, then finish them in a hot buttered pan with onion until the edges go golden.
