Sweet Cheese Pierogies
Farmer's Cheese Vareniki
Lightly sweet farmer's cheese in soft dough. Breakfast, dessert, or both. Nobody here is checking.
The filling is fresh farmer's cheese, the soft white cheese half of Eastern Europe grew up calling breakfast. They are beloved by kids on school mornings and by adults who eat them standing at the counter after everyone else is asleep. A pat of butter and a little sugar is the classic finish; a ribbon of warm honey is the upgrade.

How we cook them at home
- Bring a large pot of lightly salted water to a rolling boil.
- Add the frozen pierogies straight from the bag and give them one good stir so nothing sticks.
- When the water comes back to a boil, cook five to eight minutes, until they float and the dough turns tender.
- Drain gently, then finish sweet: a dusting of sugar, a spoonful of sour cream, or melted butter and jam.
