Raisin & Apricot Cheese Pierogies
Sweet cheese vareniki with raisins & apricot
The bag that rarely survives to the weekend.
Izuminka means a little raisin in Russian, and also the special touch that makes something worth remembering; this filling earns its name both ways. It is the bag for the resident sweet tooth, and for holiday breakfasts that need to feel like an occasion without extra work. Serve them warm with melted butter and nothing else, because they bring their own sweetness.

How we cook them at home
- Bring a large pot of lightly salted water to a rolling boil.
- Add the frozen pierogies straight from the bag and give them one good stir so nothing sticks.
- When the water comes back to a boil, cook five to eight minutes, until they float and the dough turns tender.
- Drain gently, then finish sweet: a dusting of sugar, a spoonful of sour cream, or melted butter and jam.
